1 tablespoon creamy peanut butter 3 teaspoons minced fresh ginger 2 teaspoons minced garlic 1 teaspoon soy sauce 1/2 teaspoon crushed red pepper flakes Juice of 1 lime 1/4 teaspoon salt 2 teaspoons curry powder 4 cups chicken, cooked and finely chopped 1/2 cup chopped peanutsMix all ingredients except chopped peanuts in a bowl and form into a ball. Roll in peanuts. Refrigerate until ready to eat. Serve with crackers or raw vegetables.
