3/4 cup packed brown sugar
1 teaspoon ancho chili powder
1 teaspoon black pepper
1 teaspoon allspice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon celery seeds
1/2 teaspoon ground cloves
1/2 teaspoon cayenne pepper
1/4 teaspoon ground mace or nutmeg
1/2 cup rice vinegar
1/2 cup honey
2 tablespoons soy sauce
1 bay leaf
28 ounces ketchup
1 tablespoon Liquid Smoke
6 tablespoons pineapple juice concentrate
Mix all ingredients in saucepan and bring to a simmer. Simmer for 30 minutes. After 30 minutes, check for a balance between sweet and sour. If it is too sweet, add a little more vinegar. If it is too sour, add a little more brown sugar. Add cayenne if more spice is desired and add salt to taste.
