“This recipe originated from Ms. Sallye Baker in Kingsland. She bakes them for her deer lease boys every season,” McWilliams says. “She gave the recipe to my sweetie, Kelly, and I started baking them for him over a year ago. He gets a batch almost every other week now!”

1 cup chopped pecans
1 cup brown sugar
1/2 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, melted
2 eggs, beaten
1 teaspoon vanilla extract

1. Preheat oven to 350 degrees. In a medium-size bowl, stir together pecans, brown sugar, flour, baking powder and salt.

2. Add melted butter, eggs and vanilla to bowl and stir to mix well.

3. Spoon batter into a foil-lined muffin pan. (Batter will stick to regular paper muffin cups.) Fill each cup about 3/4 full. Bake 20–25 minutes.

Makes 12 muffins.

Cook’s Tip

These will not rise much and the finished product will be flat on top.
