Throughout Acadiana (the French-speaking part of Louisiana that is home to Acadians, or Cajuns), “dirty” rice typically means rice flavored with chicken or pork livers and gizzards. If liver is not your thing, feel free to omit it and make this recipe using only ground beef.

2 medium onions, chopped
2 ribs of celery, chopped
4 green onions, chopped
3 tablespoons vegetable oil
1/4 pound chicken livers, chopped
1/4 pound chicken gizzards, chopped
1/2 pound ground beef
2 tablespoons parsley, chopped
1 beef bouillon cube dissolved in ½ cup hot water
1 tablespoon Worcestershire sauce
Salt and black pepper, to taste
Cayenne pepper, to taste
3 cups cooked rice

1. Sauté the onions, celery and green onions in oil until soft. Add the livers, gizzards, ground beef and parsley, and cook, stirring, until the meat has browned. Add the beef bouillon liquid and seasonings, cover and simmer 30 minutes.

2. Remove from heat and mix well with cooked rice to serve.

Serves 6.
