1 pound unsalted butter
1 pound plus 2 cups semisweet chocolate chips
6 ounces unsweetened chocolate
6 large eggs
2 tablespoons vanilla extract
2 1/4 cups granulated sugar
3 tablespoons instant malt or instant coffee
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 1/2 cups chopped nuts, optional

Preheat oven to 350 degrees. Melt butter, chocolate chips and unsweetened chocolate in top of double boiler. Cool slightly. In large bowl, mix eggs, vanilla, sugar and malt or coffee. Stir in chocolate mixture and cool to room temperature. In another large bowl, combine flour, baking powder, salt and nuts, if using. Add to chocolate mixture, stirring until just combined. Pour into a greased and floured 18 x 13 x 1-inch sheet pan and bake about 30 minutes. Do not overbake. Cool completely before cutting into squares.
