The Department of Agriculture recommends cooking salmon to an internal temperature of 145 degrees. Because fish continues to cook internally when removed from the oven, begin checking the salmon a few minutes before you think it should be done. —AG

1/4 cup soy sauce
1/4 cup mayonnaise
1/2 cup brown sugar
1/2 tablespoon chopped fresh ginger
1 large salmon filet or whole side of salmon

1. Preheat oven to 325 degrees. Grease a baking dish or line with parchment paper.

2. Mix soy, mayonnaise, brown sugar and ginger in a saucepan. Set pan over medium heat and cook, stirring often, until smooth and warm.

3. Spread mayonnaise mixture liberally over salmon, then place skin-side-down in prepared dish.

4. Bake 25–30 minutes or until fish is flaky and fully cooked. Let cool for 5 minutes. Serve with white rice, if desired.
